At the end of our Fall quarter in Lacoste, Fabrice Rigois, head chef of SCAD Lacoste conducted a cooking demo to show students how to cook some french dishes. He also shared stories to help students appreciate the dishes that he is preparing.
In France, cooking is not a job, it’s a profession. Fabrice has been cooking for more 20 years now.
In the olden times, French royalty rarely eat chicken.
They prefer birds because they believe the closer to the ground an animal lives, they more dirty they are.
